Berry Divine Crepes
You can take the girl outta ihop, but you cant take ihop outta the girl. I’m a full time crepe lover and sweet is the way to go!u00a0 I avoided making them for years because I was convinced they’d be complicated or impossible to flip without making a complete mess. Turns out, they’re actually one of the easiest breakfasts you can make once you get the hang of the first one (and let’s be honest, the first crepe is basically the test crepe anyway).
These crepes are light, buttery, and incredibly versatile. Whether you’re piling them high with fresh berries and whipped cream, slathering them with Nutella, or keeping it simple with a little butter and cinnamon sugar, they’re one of those recipes that somehow feel extra special without requiring much extra effort.

Tips for Perfect Crepes
Don’t stress about the first one.
Seriously. The first crepe is almost always a practice round while your pan reaches the perfect temperature.
Use a nonstick skillet.
It makes flipping so much easier and keeps the crepes nice and smooth.
Keep the batter thin.
Crepe batter should be much thinner than pancake batter. That’s what gives them their delicate texture.
Swirl quickly.
As soon as the batter hits the pan, tilt and rotate it so it spreads into a thin circle before it starts cooking.
Don’t overcook them.
Once the edges begin lifting and the bottom is lightly golden, it’s time to flip.
Make Them Your Own
One of the best things about crepes is how customizable they are. Some of my favorite fillings include:

Storage
If you have leftovers (which almost never happens at my house), let the crepes cool completely before stacking them with parchment paper between each one. Store them in an airtight container in the refrigerator for up to 3 days.
They also freeze surprisingly well! Just thaw them overnight in the fridge and warm them in a skillet for a few seconds before serving.

Berry Divine Crepes

- Crepes:
2 cups all purpose flour
2 cups milk (any you prefer)
6 eggs
2 tsp vanilla extract
4 tbsp sugar
4 tbsp melted butter
- Sweet Cream
8 oz softened cream cheese
1/2 cup powdered sugar
1 tbsp lemon juice
12oz cool whip
2 cups sliced berries of your choice (for topping)
Here's how you do it
- Combine all crepe ingredients EXCEPT for melted butter. Mix until fully incorporated.
- Add melted butter to crepe mixture. Butter should be melted, but not hot (otherwise it will pre-cook the eggs). Set mixture aside.
- Combine all Sweet Cream ingredients fully. You can mix by hand or use a stand mixer to whip it a bit and make it fluffier. Set aside. (You can prep this ahead of time and store in the fridge when you're ready to serve.
- Heat a non-stick skillet over medium high heat. Pour 1/3 cup of batter into the pan and rotate so the batter spreads thinly over the base of the pan. Cook for 20-30 seconds, then flip and cook the other side. Crepes should have a light brown speckled appearance. Repeat for all remaining batter.
- Fill crepes with desiered amout of cream and berries. Enjoy!
Notes
- I prefer sweet crepes, but you could also use the same crepe base and fill with a savory mix, such as eggs and bacon.
- Refridgerate leftover crepes in an airtight container for up to 5 days.
